Recipe: Chocolate Chip Cookie Nut Clusters

How to make delicious snack-able gluten free Chocolate Chip Cookie Nut Clusters.

Cute, little, snackable, bitesize, chocolate cookie morsels that are a great snack for any party or even a great gift. Plus this recipe is actually a great way to re-purpose those cookies that become hard and brittle. 

Ingredients:

  • 12 Liteful Foods chocolate chip cookies (crumbled)
  • 1 8 oz. block of cream cheese, softened
  • 1 ½ cups of peanuts or lightly salted nut of your choice (crushed)
  • 12 oz. of semi-sweet chocolate chips

Step 1

In a mixer blend cream cheese until fluffy. Slowly add crumbled chocolate chip cookies and mix until well blended with cream cheese. 

 

Step 2

Using a 1 tablespoon measuring spoon, scoop small portions of cookie mixture and using hands roll into small balls. Place balls on a cookie sheet lined with wax paper. Once the mixture is gone and cookie sheet is filled, place in freezer for 10 minutes.

 

Step 3

While cookie balls are cooling. You will need to do two things: make sure your nut of choice is crushed, and place them into a small boil; and, melt semi sweet chocolate chips in the microwave or using a double boiler. Place 6 oz. of chocolate chips (half the bag) into a microwave safe container and heat for 1 minute.
Remove and mix until smooth. If additional time is needed, heat in 10-20 second bursts. Once melted, add the other 6 oz. of chocolate chips, or remaining half of the bag. Continue to blend until all of the chocolate chips are melted

Step 4

Remove chilled cookie balls from the freezer and roll/press them gently into your crushed nuts.

Step 5

Submerge cookie balls into melted chocolate using toothpick, skewer, or pretzel stick. You can also slowly pour melted chocolate over cookie balls as well, just make sure they remain on your wax paper lined cookie sheet while doing so.

Step 6

Once all balls are coated and covered, place back in the refrigerator on wax paper until chilled, or minimum of 1 hour.

Step 7

Place into a decorative gift bag or onto serving tray and let your guests enjoy.
