Recipe: Gluten Free Reuben Casserole
How to cook a delicious gluten free Reuben Casserole using Liteful Foods Honey Bread.
There's nothing quite like a delicious, juicy, loaded Reuben Sandwich. That savory cured poastrami... that tangy sauerkraut... and that melty swiss cheese... Mmm! It's the greatest. So we were originally going to tell you how to make a delicious Reuben Sandwich using our signature Liteful Foods Honey Bread. But that would have been to easy. We decided to kick it up a notch and get real crafty: a gluten free Reuben Casserole!
Ingredients:
- 6 slices of Liteful Foods Gluten Free Honey Bread
- 1 pound thinly sliced pastrami
- 1 cup of sauerkraut (drained)
- 1 cup dill pickles (chopped)
- 4 cups Swiss cheese (shredded)
- 1 cup of milk
- 3 large eggs
- ⅓ cup thousand island dressing
- ¼ cup mustard

45 minutes
Step 1
Preheat oven to 350 degrees. Coat a large baking dish with oil or nonstick cooking spray. Take four slices of Liteful Food Honey Bread and cut them into cubes (about 1.5 inch cubes). Put remaining slices of bread into food processor and pulse into fine breadcrumbs and set bread crumbs aside.
Step 2
Spread cubed bread into the bottom of the prepared baking dish then cover evenly with half of pastrami. Then evenly top with sauerkraut and pickles. Then sprinkle 2 cups of shredded Swiss cheese.
Step 3
Next, top with remaining pastrami. Feel free to gently push down casserole to help compact it a bit. Then sprinkle remaining 2 cups of Swiss cheese.
Step 4
In a medium bowl, whisk together milk, eggs, thousand island dressing and mustard. Pour mixture over casserole.
Step 5
Top with Liteful Foods Honey Breadcrumbs.
Step 6
Cover with foil and then Bake for 45 minutes.
Remove from oven, let rest and cool for a few minutes. Then enjoy!
