Recipe: Smothered Chicken Pot Pie Biscuit

A Hearty Recipe for Smothered Chicken Pot Pie Biscuits 


 Liteful Food Chicken Pot Pie

Gluten free biscuits smothered in chicken pot pie deliciousness.

If you spend any time with the Liteful Foods team you have likely heard this saying: "our biscuits go with everything". We say this because it's true: our gluten free biscuits literally go with everything. There's just something special about those warm, soft, fluffy, buttery biscuits that seem to pair with just about every food dish.

Case in point, we're here to introduce you to our chicken pot pie recipe! And no, it's not a pie. We decided to make this one easy... because honestly who has time to make a pie crust? So our recipe takes all the bets parts of the chicken pot pie, mixes it all together, and gets smothered over a warm gluten free biscuit. Delicious. 


  • 1/2 of a chicken
  • 3 carrots (diced)
  • 3 stalks of celery (diced)
  • 1 cup white onion (diced)
  • 2 Liteful Foods Biscuits
  • 1 cup frozen peas
  • 48 oz of water or stock 
  • 1 1/2 cups diced potato
  • 1 tbsp salt
  • 1/2 tbsp pepper 
  • 2 sage leaves 
  • 2 sprigs of fresh thyme 
  • 1 sprig of rosemary 
  • 1/2 tsp nutmeg 
  • 1 cup heavy cream

Prep Time:

15 minutes

Cook Time:

2 1/2 hours (35 minutes if using Instant Pot)

Step 1

Pour a tablespoon of oil into a large pan and sauté celery, onion, and carrot. Let sauté until slightly brown. Add garlic and continue the sauté process.


Step 2

Add potatoes, chicken, stock, and herbs to pot.


Step 3

Bring to boil and simmer on medium heat for two hours. If using an Instant Pot cook on high pressure for 25 minutes.


Step 4

Check to see if the chicken falls off the bone. If so, turn the heat off and remove the chicken and the herbs. Pull chicken when cool and let stock cool to skim the fat. Add pulled chicken to large pot. Season with salt pepper and nutmeg.

Step 5

In a different pan mix 1/2 a cup of Liteful Foods all purpose mix with 1 cup of hot stock. Mix and whisk until smooth. Add to large pot.

Step 6

Heat up two Liteful Foods biscuits (from frozen) by sticking them in the microwave for 45 to 60 seconds. While biscuits are heating, add frozen peas and cream to large pot. Continue to stir and mix the large pot.

Step 7
Remove warm biscuits and gently pour your chicken pot pie mixture on top of your warm biscuits. Enjoy.
